Turkey Quinoa Taco Bowls

I’m all about quick and easy meals. 30 minutes or less – even better. I try to cook things every week that I know will be enough for dinner for my husband and I AND lunch the next day. We make these taco bowls probably every single week. We switch up the meat to keep things spicy. One week we do beef, the next chicken and the next turkey. It’s a fun rotation. You can also switch up the rice/grain that you use. This example I have quinoa. I had some pre-cooked in my fridge and wanted to eat it up and it turned out amazing. We usually use Near East Spanish rice and we love it!

The great thing about cooking is you can be creative. There are no rules! If it sounds good, try it!

Ingredients

-1lb ground turkey
– 2 bell peppers of choice (I used yellow & red)
-2 cups of cooked quinoa
-1 can of drained pinto OR black beans (this pic shows pinto)
-1/2 diced onion
-1 clove of minced garlic
-cheese and salsa for topping

For the Taco Seasoning
-2 tablespoons of cumin
-2 teaspoons of chili powder (add more if you want it spicier)
-2 teaspoons of paprikia
-1-2 teaspoons of salt & pepper

Directions

  1. In a large sauce pan, brown the ground turkey and add in the taco seasoning while cooking
  2. Add in the diced onion, bell peppers and garlic and let simmer for 5 or so minutes to tenderize the peppers
  3. Add the can of beans (drained) and stir well
  4. Add in the cooked quinoa and stir well
  5. Turn down the heat to low/simmer and let it all simmer for another 10-15 minutes on low
  6. Serve your way- add grated cheese, salsa, avocado, sour cream, whatever you like!
