Baked Winter Fruit

Ah, nothing like some sweet fruit. Summer is my favorite time of the year for fruit because there are so many varieties and they are all so sweet and ripe. I wish it were available all year round.

But alas, i will have to settle.

I love this dish so much because the cranberries. I think these little guys are underrated but they brighten up and sweeten up this fruit dish so beautifully. I used 4oz (approx half a bag) of fresh cranberries. Don’t get canned, it’s not the same.

This dish is simple and it’s perfect for a brunch or even dessert. You’ll be hooked and your family will love you even more.

Ingredients

  • 2 apples of your choice
  • 2 pears of your choice
  • 4 oz of fresh, rinsed cranberries
  • 1 lb fresh, rinsed raspberries
  • 2 tsp cinnamon
  • 1 tbs honey

Directions

Preheat oven to 350 and spray a cookie sheet or glass baking dish with coconut oil.

Cut up the apples and pears into bite sized chunks and place in pan. Add in the cranberries and raspberries and mix them up to be blended.

Sprinkle on the cinnamon and mix well

Drizzle the honey evenly over the fruit mixture then mix well so it’s all nice and blended

Cook in the oven for 15-20 minutes or until fork tender and enjoy!
